Italian Sausage Tortellini Soup

Ingredients

•1lb Italian sausage

•1cup coarsely chopped onion

•2 garlic cloves, chopped

•5 cups beef broth

•1/2 cup red wine

•1 can fire roasted tomatoes

•1cup carrots sliced

•1/2 tsp basil leaves

•1/2 tsp oregano leaves

•2 sliced zucchinis

•8 ounces cheese tortellini

•3 tbsp chopped fresh parsley

•1 green pepper, diced

•Grated Parmesan Cheese

Directions

If sausage comes in casing, remove it and brown over medium high heat breaking into pieces. Remove from pan leaving drippings. Sauté onions and garlic in pan until tender. Add red wine and deglaze pan stirring for 2 minutes. Add beef broth, fire roasted tomatoes, carrots, basil and oregano to pan. Return sausage and bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Stir in zucchini, parsley, and green pepper. Simmer for an additional 35 to 40 minutes.

Meanwhile, cook the tortellini separately according to package directions. Drain. Place cooked tortellini in he bottom of a heated bowl and ladle finished soup on top. Sprinkle with grated cheese and serve.
