4-5 medium sized Yukon gold potatoes
1 onion (white or red? May use only half)
3-4 cloves garlic
3-4 tbsp melted butter
1-2 tbsp olive oil/cooking oil
Salt to taste
Pepper to taste
Red pepper to taste
Directions
1. Preheat oven to 425
2. Cut potatoes, onions, mince garlic, then mix all ingredients in a large bowl until it's all coated
3. Line baking sheet with foil, maybe oil it but there's usually enough butter/oil in the mixture that it won't stick too much
4. Pour potatoes onto baking sheet and bake for 20-25 minutes, stir halfway through and at the end
5. Raise oven temp to 500 and bake potatoes for 10-13 minutes

Cooking times can change depending on how big you slice potatoes and how crispy you want onions
