Garlic Beef Fried Rice

For the Beef:
1/2 lb (225g) beef sirloin or steak, cubed
1 tbsp soy sauce
1 tsp cornstarch
1/2 tsp sesame oil
Pinch of black pepper
For the Fried Rice:
2 cups cooked jasmine rice (cold, preferably day-old)
2 tbsp vegetable oil
2 cloves garlic, minced
1/4 cup soy sauce
1 tbsp oyster sauce
1 tsp sugar
1/2 cup green onions, chopped (reserve some for garnish)
Directions
In a bowl, combine the soy sauce, cornstarch, sesame oil, and black pepper. Add the beef cubes to the marinade, ensuring they are well coated, and let sit for 15-20 minutes.
Mix together soy sauce, oyster sauce, and sugar in a small bowl and set aside as your stir-fry sauce.
Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat and add the marinated beef. Stir-fry for 2-3 minutes or until the beef is browned. Remove from the pan and set aside.
Add the remaining tablespoon of vegetable oil to the skillet. Once hot, sauté the minced garlic for about 30 seconds until fragrant.
Introduce the cold, day-old rice to the skillet, breaking up any clumps as you stir-fry for around 2-3 minutes until heated through.
Pour the prepared stir-fry sauce over the rice and mix thoroughly. Return the beef to the skillet, tossing well to combine all ingredients. Stir in the chopped green onions and continue to cook for an additional minute.
Serve hot, garnished with extra green onions for added freshness.
