Blistered Tomato Orzo

2 cups cherry tomatoes
salt, pepper, chili flakes
diced garlic
~1 cup orzo
~1 cup broth (or amount to cook orzo)
1/4 - 1/3 cup coconut milk
juice from 1/2 lemon
~5 leaves sliced mint
Directions
In pot, blister/cook tomatoes for a few minutes with a little bit of oil, then add in seasonings, orzo, and broth. Cook according to orzo instructions. After cooked, add in coconut milk, lemon juice, and mint.
