Easy Home Fries For Breakfast

4 Large Yukon Gold or Russet Potatoes Thinly sliced. About 1/8 inch thick
1 Large onion Any kind, peeled and sliced
3 Tbl. olive oil
to taste pepper Freshly Ground
to taste salt
Directions
In a large skillet, heat the olive oil. Add sliced potatoes.
Cook on medium-high for approximately 10 minutes. Turn after approximately 3 minutes.. Continue cooking and turning every 3 minutes. You will see the potatoes starting to crisp and brown.
Add the sliced onions. Continue cooking for another 10 minutes; turning every 3 minutes.
The final minute or two of cooking add the salt and pepper to taste.
