Lentil & Parsley Salad

Ingredients

1/2 to 1 cup green or black lentils

Bunch of parsley

1 stalk celery

Olive oil, lemon, salt, pepper OR tahini

Optional cherry tomatoes, avocado, feta

Directions

Wash lentils in strainer and cook in water until soft

Chop parsley, celery, tomatoes, avocado

Prep tahini with 1 cloves garlic, juice of 1/2 or 1 lemon, water, tahini paste

Blend until it turns from brown to white

Let lentils cools and mix with parsley

Top with tahini and toppings
