**Scald**
4 cups whole milk
**COMBINE**
1/4 cup sugar
2 tablespoon soft butter
4 teaspoons kosher salt
**MIX**
2 package active dry yeast
1/2 cup warm water
pinch sugar
**ADD**
1,400 grams all-purpose flour
**TOPPING**
melted butter
Directions
PREHEAT: Bake: 375 degrees and bake for 40 to 45 minutes, remove from oven and brush with more melted butter. Cool on rack.
1. SCALD: milk 7 minutes in microwave. Let cool for 20 minutes. THEN REMOVE SCUM FROM MILK.
2. COMBINE: In large bowl add sugar, salt, and butter. Then add cooled milk (110 to 115 ).
3. MIX: yeast and sugar in warm water let stand 5 minutes.
4. ADD: 2 cups flour and mix well, add yeast mixture and combine. Add 10 more cups flour and knead about 8 minutes.
5. Place in dough box let rise until doubled 1 1/4 hours, punch down.
6. Shape and brush tops with melted butter cover with proofing cloth and let rise for 45 - 60 minutes.
