Ingredients (for 2):
A drizzle of olive oil
3 cloves of garlic
1 shallot
2 tbsp tomato paste
spices : salt, pepper, pili-pili, parsley
à bit of pasta cooking water
double cream - 100 ml
uncooked rigatoni- 200g
100g mozzarella (less or more depending on your taste)
Basil for the topping
Directions
Brown garlic and shallots in olive oil.
Add the tomato paste and spices. Stir.
Add pasta cooking water, cream and stir.
Add the cooked pasta and stir.
Add the mozzarella and stir.
It’s ready and you can add mozzarella as you like and top with basil.
if you want the sauce to be more homogeneous you can add butter and stir again
