Uncle Greg’s Sauce

Brown the following in olive oil:
olive oil
1 tablespoon garlic
1/2 teaspoon anise
1 teaspoon oregano
1 teaspoon of parsley
Add tomato sauce
1 tablespoon sugar,
1 teaspoon or two of oregano.
tomato paste if you want to
thicken it.
If you make meatball, dice up on-
ion in pan after cooking meat-
balls, cook onions then add to
sauce.

Directions
Per Quart
Put olive oil in bottom of pan,
add tablespoon of garlic, 1/2 tea-
spoon anise, teaspoon of oregano,
teaspoon of parsley.
Simmer for 10 minutes or until
garlic starts to brown.
Add tomato sauce, tablespoon
sugar, teaspoon or two of oreg-
ano.
Bring till it starts to bubble, then
put on low for an hour or more.
Add tomato paste if you want to
thicken it. If you make meatball,
dice up onion in pan after cook-
ing meatballs, cook onions then
add to sauce.
Sometimes I add wine or vegetables like green pepper
