Amish Chicken Casserole ( Same as Mine )

**COOK**
1 (8 ounce) package egg noodles
**MELT**
1/2 cup butter
1/3 cup all-purpose flour
2 cups chicken broth
1 cup milk or 1/2 & 1/2
2 teaspoons salt
1/2 teaspoon ground black pepper
2 cups chopped cooked chicken
1 (4 ounce) can sliced mushrooms, drained
1 ( 2 oz) jar pimento drained
**TOP**
1/3 cup grated Parmesan cheese
Directions
PREHEAT:Bake 350 degrees and bake 35 minutes
Butter a 13x9 Emile Henry Blue pan.
1. COOK: Bring a large pot of lightly salted water to a boil. Cook egg noodles at a boil, stirring occasionally, until tender yet firm to the bite, 6 to 8 minutes. Drain and set aside.
2. MELT: butter in a medium saucepan over low heat. Gradually add flour, stirring until smooth. Cook, stirring constantly, for 1 minute. Gradually stir in chicken broth and milk. Increase heat to medium and cook and stir until mixture is bubbling and slightly thickened, 5 to 7 minutes.
3. REMOVE: sauce from the heat and stir in salt and pepper mushrooms, and pimento.
4. COMBINE: reserved egg noodles, cooked chicken, and mushrooms in a large bowl. Add sauce and stir until combined. Spoon mixture into the prepared baking dish
5. TOP: sprinkle with Parmesan cheese.
BAKE: uncovered, in the preheated oven until thoroughly heated.
