    Palpayasam

    Ingredients

    4 cup Milk

    1 cup Sugar

    ⅓ cup Broken Rice

    Directions

    In a pressure cooker, add all the ingredients and mix well.

    Close the pressure cooker without weight on it and cook in high heat until small vapour comes through the white nozzle.

    Then add weight on the nozzle and cook in medium heat for 30 minutes (If there comes a whistle in medium heat, reduce to flame to medium high heat).

    Turn off the heat and allow to rest for another 45 minutes.

    Palpayasam is ready to serve.

    Notes

    Ensure the pressure cooker is very clean. You may boil some water in pressure cooker. Once boiled add some on to the lid as well. This will clean the pressure cooker.

    Do not wash the rice.

    If it is whole rice, pulse once or twice in the mixer to make broken rice.
