Sour Cream Banana Bread

CREAM
1 cup unsalted butter, softened
2 cups granulated sugar
ADD
4 large eggs
2 tsp vanilla extract
ADD
5 bananas small or 4 large (2 cups)
360 grams all-purpose flour (3 cups)
2 tsp baking soda
1 tsp kosher salt
3/4 cup chopped pecans
FOLD IN
1 cup sour cream
Directions
PREHEAT:Bake to 325°F. Spray 6.37x3.75 pans. Place parchment paper on bottom , set aside.
1. In a large mixing bowl, beat butter and sugar until fluffy.
2. Add in eggs and vanilla and beat until well combined.
3. Add in bananas. Mix until creamy.
4. Add in flour, baking soda, salt and pecans. Stir just until combined.
5. Fold in the sour cream until blended.
Pour into prepared loaf pans evenly.
Bake for 45 minutes test, remove and cool in pans ten minutes. Remove from pans and cool completely. You can then wrap in foil, or ziploc...or freeze for later!
