Chocolate and Peanut Butter Oat Bars

Ingredients

2 cups Almond Milk (Any milk or milk substitute)

1/4 cup Maple Syrup (Or Honey)

1 tbsp Olive Oil (Or Apple Sauce)

1 tsp Vanilla Extract

2 cups Classic Rolled Oats

2 tsp Cinnamon

1/2 tsp Salt

1 tsp Baking Powder

3/4 cup Chocolate Chips (Semi-Sweet)

1 tbsp Butter (Unsalted)

8 tsps Peanut Butter

Directions

Grease a baking dish (8x11) with the butter

Combine the dry ingredients, including the chocolate chips then combine

Pour the dry ingredients into the greased baking dish

Scatter the peanut butter in 1 tsp dollops on top of the dry ingredients

Combine the wet ingredients into a large mixing bowl

Pour the wet ingredients overtop of the dry ingredients

Bake at 375 degrees for 45 minutes

Let it cool (30 minutes), then divide into 6 bars

Store in the fridge for 5 days, or freeze for up to 2 months
