Kale and Green Bell Pepper Pasta with Cheese

Ingredients

• 1 large kale, roughly chopped

• 3/4 pound pasta

• 1 tbsp olive oil

• 1 red onion, chopped

• 2 green bell peppers, chopped

• 4 garlic cloves, chopped

2 tbsp capers, drained

• 1/2 tsp red pepper flakes

• salt and pepper

• juice and zest of 1 lemon 2 cup cheese, grated

Directions

Recipe:

1. Bring a large pot salted of water to a boil. Add kale and boil until tender, about 2-3 minutes. Transfer the kale to a bowl with a slotted spoon and set aside.

2. Return the water to a boil and add the pasta. Cook according to package directions, until al dente. Drain the pasta, reserving 1/2 cup of the pasta water, and set aside.

3. While the pasta boils, heat olive oil in a large skillet. Add the onion and peppers and sauté for 5-6 minutes, until softened. Stir in the garlic, capers, and red pepper flakes, and season with salt to taste. Add the lemon juice, zest, and white wine, and simmer until the wine is nearly evaporated, about 3 minutes. Return the kale and pasta to the pan and stir until combined.

4. Stir in cheese until the pasta is well coated and season with salt and pepper to taste. Serve the pasta in shallow bowls, squeezing over lemon wedges if desired.
