Fiery Pineapple Fried Rice

Ingredients

4 Garlic Cloves

1 Red Onion

350g Drained Roasted Red Peppers

5g Fresh Coriander

2 tsp Chipotle Paste

250g Pineapple

500g Microwave Rice

4 tbsp Oyster Sauce

4 Eggs

Vegetable Oil

Directions

Peel and thinly slice the garlic and onion. Drain and mince the peppers. Pick the coriander leaves and thinly slice the stems.

Add a drizzle of oil to a wok or frying pan set over a medium-high heat. Once hot, add the onion and garlic and fry for 2-3 mins until starting to soften. Add the coriander stems, chipotle and pineapple, then stir-fry until fragrant. Add the cooked rice, oyster sauce and peppers, then toss until coated.

In another frying pan, fry the eggs until cooked to your liking.

Spoon the fried rice onto plates and top with the fried egg and coriander leaves.

Notes

A spicy, smoky twist on fried rice. Simply spiced with chipotle paste, plus a touch of sweetness from pineapple.
