Roast Chicken Thighs

8 bone-in skin-on chicken thighs
Grapeseed or other neutral oil
Salt and pepper
Seasonings of choice:
Garlic powder + Italian seasoning OR rosemary + lemon OR drizzle of balsamic
Cumin + achiote + Mexican oregano + lime (top w cilantro after cooking)
Garam masala + garlic + lemon/orange
Five spice + garlic + sesame oil + rice vinegar (top w scallions after cooking)
Directions
1) Preheat oven to 475
2) Oil pan and season chicken on both sides. Arrange with skin side up
3) Roast at 475 x 30-40 min or to internal temp of 165
4) Allow to rest 5-10 min before serving, and top with optional seasonings if desired
