Crunchy Cucumber, Feta, and Almond Salad

Ingredients

4 cups coarsely chopped romaine lettuce hearts

2½ cups diced English cucumber

½ cup unsalted roasted almonds,

coarsely chopped

2 oz. feta cheese, crumbled (about

½ cup)

2 Tbsp. chopped fresh dill

2 Tbsp. extra-virgin olive oil

2 Tbsp. white wine vinegar

1 tsp. Dijon mustard

½ tsp. kosher salt

½ tsp. freshly ground black pepper

Directions

Combine lettuce, cucumber, almonds, and feta in a large bowl; toss. Combine dill and remaining ingredients in a small bowl, stirring with a whisk. Add dill mixture to lettuce mixture; toss to coat.
