Irish Soda Bread

**MIX:
540 grams all-purpose flour (41/2 cups )
6 Tbsp SACO Cultured Buttermilk Blend
3 Tbsp granulated sugar
1 Tbsp baking powder
1 tsp salt
1 tsp baking soda
**CUT IN:
¾ cup butter
**ADD:
2 eggs, beaten , reserve 1 TBSP.
1½ cups water
Directions
Preheat : Bake to 350°F. Bake 1 hour and 10 minutes, or until wooden toothpick tests done.
1. Grease a 1½-quart round casserole dish.
2. In large mixing bowl sift together flour, Buttermilk Blend, sugar, baking powder, salt and baking soda.
3. Cut in butter until mixture resembles cornmeal. ( use Food Processor )
4. In cup beat eggs.
5. Remove 1 Tbsp and reserve.
6. Stir remaining beaten eggs and water into flour mixture, just until flour is moistened.
7. Do not over beat. (Dough should be sticky.)
8. Turn dough out onto well-floured surface and knead lightly 15 seconds (about 10 times).
9. Shape dough into ball and place in prepared casserole dish.
10. In the center of the ball, cut a 4-inch cross about ¼ inch deep with a sharp knife.
11. Brush dough with reserved 1 Tbsp. of egg.
Cool in casserole dish 10 minutes, then remove and cool completely on rack.
