The Best Fried Rice

3 slices bacon
3 eggs, whisked
1 medium carrots, small dice
1/2 small onion, small dice
1 1/2 cloves garlic, minced
1/2 cup frozen peas, thawed
2 cups cooked and chilled rice
1 1/2 tablespoons low sodium soy sauce
1 tablespoons oyster sauce
1/2 teaspoon sesame oil
sliced green onions for garnish, if desired
Directions
1. Fry bacon in a large skillet. Set aside
2. Add 1 tablespoon bacon grease ,then eggs and scramble until fully cooked. Remove them from the pan and set aside.
3. Add the remaining 1/2 tablespoon of bacon grease into the pan.
4. Add carrots and onion to the pan and cook until tender, 3-4 minutes.
5. Stir in garlic and cook for an additional minute.
6. Add in the cold rice and peas and sauté for 3-4 minutes. The rice should brown up a bit.
7. Add the eggs and bacon cut in small pieces back to the pan and stir in soy sauce, oyster sauce and sesame oil. Cook for 1-2 minutes to heat through.
Serve immediately with green onions for garnish, if desired.
