Dressing

•1/2 tablespoon minced ginger

•1 clove garlic, minced

•2 tablespoons neutral oil

•1 tablespoon soy

•1 tablespoon rice vinegar

•Juice of 1/2 lime

•1 teaspoon brown sugar

•1 1/2 cups broccoli coleslaw mix

Taco

•1 tablespoon neutral oil

•1 1/2 cups cooked, deli roasted chicken, shredded

•1 teaspoon fresh ginger, minced

•1 clove garlic, minced

•Pinch Kosher salt

•1 tablespoon Chili Paste (Sambal Oelek)

•Sour cream

•4 tortillas, corn or flour

Directions

1In medium bowl mix dressing ingredients (except slaw) well to dissolve sugar, then add slaw and mix to combine - set aside

2Heat non-stick pan over medium, and oil and when almost smoking put in the chicken

3Cook, stirring often about a minute then add the ginger & garlic, salt and chili paste - cook about a minute

4Warm tortillas

5Build your taco: sour cream, slaw mix, chicken - eat!
