Directions
Bring a large pot of salted water to a boil. Wash and dry produce. Trim and halve zucchini lengthwise; finely dice into ¼-inch-thick pieces. Halve, peel, and finely chop onion.
Remove sausage from casing if necessary; discard casing. Heat a drizzle of oil in a large pan. Add zucchini and onion; season with salt and pepper. Cook, stirring occasionally, until softened, 3 minutes. Add sausage, Italian seasoning, and a pinch of chili flakes from your pantry if desired; cook, stirring occasionally, until veggies are browned and tender and sausage is cooked through, 4-5 minutes.
Swap in chicken sausage or beef for pork sausage.
Once water is boiling, add pasta to pot. Cook until al dente,
9-11 minutes. Reserve ½ cup pasta cooking water (1 cup for
4 servings), then drain.
Add tomato paste to pan with sausage mixture; stir until well combined. Remove from heat; stir in stock concentrate, cream cheese, and ¼ cup milk (½ cup for 4 servings). Mix until well combined, then stir in drained pasta. (If needed, stir in reserved pasta cooking water a splash at a time until pasta is coated in a creamy sauce.) Taste and season with salt and pepper.
divide pasta between bowls and serve.
