10 hard boiled eggs (or to preference)
1 kg pork belly
6 tsp fish sauce
5 tsp sugar (or to taste)
water/chicken broth/water
Shallots or onion
Garlic
Green onion
Directions
Boil meat for a few minutes to remove impurities.
On a low or medium heat, add oil and then the sugar. Wait for it to melt and caramelize until you have a dark brown caramel sauce. Set aside.
Cut the meat into 5cm or 2" chunks.
Brown meat and set aside.
Sauté the onion or shallot and garlic.
Add the pork belly back and add the fish sauce.
Add brown sauce and mix.
Pour the liquid in to cover ingredients. Add the eggs in. Stir well then bring to a boil on high heat.
Keep stirring until the sauce reduces.
Add green onion at the end.
