    Rainbow Poke Cake – a Colorful & Creamy Dessert

    Ingredients

    For the Cake:

    1 box white or vanilla cake mix

    3 large eggs

    ⅓ cup vegetable or canola oil

    1 cup water or milk

    For the Pudding:

    2 (3.4 oz) boxes instant vanilla pudding mix

    3 cups milk

    For the Whipped Cream Frosting:

    1 ¼ cups heavy whipping cream

    ¼ cup powdered sugar

    For Decoration:

    Rainbow sprinkles

    Assorted food coloring

    Directions

    Preheat & Prepare – Set oven to 350°F. Grease a 9×13-inch baking pan with cooking spray.

    Make the Batter – Beat cake mix, eggs, oil, and water/milk until smooth. Divide batter into 5-6 bowls and tint each with different food coloring.

    Layer & Bake – Spoon colored batters randomly into the pan without mixing. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean. Cool completely.

    Add Pudding – Whisk pudding mix and milk until smooth. Poke holes in the cooled cake with a wooden spoon handle, then pour pudding over the cake, ensuring it seeps into the holes. Chill for at least 2 hours.

    Make the Frosting – Beat heavy cream and powdered sugar until stiff peaks form. Spread evenly over the chilled cake.

    Decorate & Serve – Top with rainbow sprinkles for a fun, colorful finish. Slice and enjoy!
