Hatch Red Chile Sauce

1/4 lb ground pork
8 garlic cloves, minced
1 1/2 cups chopped white onion
Oil for frying
6 sun dried Hatch red chilies
1/3 cup Hatch red chile powder
4 1/2 cup chicken stock
2 tsp salt
1 tsp Maseca
1 Mexican bay leaf, ground
1 tsp ground cumin
2 tsp dried Mexican oregano
Pinch of ground cloves
Directions
Brown the pork, garlic, and onion in the oil in a heavy skillet. Add chilies, Chile powder, chicken stock, and all remaining ingredients. Simmer slowly for 20 minutes stirring from time to time. Purée in blender until smooth.
