Fried Rice

2 tbls peanut or vegetable oil
1 tsp fresh grated ginger
3 cups cold rice
1/2 tsp salt
Full pack bacon
1/2 cup peas
1/2 cup corn
4 eggs
1 tsp sesame oil
Directions
Chop bacon and cook in pan.
Heat the oil in a large nonstick wok over medium high heat. Add the fresh grated ginger and sauté very briefly - 30 seconds.
Add the rice and sprinkle on the salt and soy sauce. Using a wooden spoon or spatula, begin to press down on the rice and stir to break up the clumps. Keep the rice moving so it doesn’t get too browned.
After the rice begins to soften, add the peas and corn. Continue stirring until heated through.
Move rice to the outsides of pan, making a well. Add eggs to the well, and begin scrambling them. When they are almost scrambled, sprinkle on the sesame oil and begin mixing them into the rice.
Taste for salt and pepper.
