Jiffy Burger-Style Burgers

Ingredients

2 pounds lean ground beef

8 tablespoons (1 stick) butter

3 large onions, sliced into rings

1/2 small onion, minced

salt and pepper

8 soft hamburger buns, toasted

Ketchup and relish, for serving (optional)

Directions

Divide the beef into eight equal portions and shape into 2 1/2-inch-square patties.

Place them on a piece of wax paper.

Puncture each burger with five holes, using a straw or a chopstick.

Wrap the burgers in a second piece of wax paper and freeze until firm.

In a Dutch oven or a roasting pan, melt the butter over medium heat.

Add the sliced and minced onions and sauté until soft, about 10 minutes. Season with salt and pepper.

Place the frozen burgers on top of the onions and cook, covered, until the meat is cooked through, about 10 minutes.

Place the burger on each bun and serve with ketchup, relish, and the sautéed onions, if desired.

Dolly says: "I've always loved a good hamburger--there's nothing better tastin' after a long day on the road and playing to a big audience. Whenever my crew and I are touring, we always try to find a good burger joint in town. I do love the In-N-Out burgers in L.A., and the sliders from White Castle, but I'll always have a soft spot for Jiffy Burgers, the steamed square belly bombs that I first tasted at The Jiffy in Knoxville, God rest its soul. When I first began singin' on the radio in Knoxville, I stayed with my aunt, who lived right up the hill from a Jiffy joint. The burgers were so irresistible, I used to steal her laundry money to buy them. Honestly, they were the only things I ever stole or lied about! When I started doing the Cas Walker Show in Knoxville, I could buy my own Jiffy Burgers, which I did, by the bagful! This is my homemade version, which is as close as it gets to the real thing."
