Apple Pie

**MIX**
1/2. white sugar
1/4 cup brown sugar
5 tbsp all-purpose flour
3/4 tsp ground cinnamon
3/4 tsp ground nutmeg
1/4 tsp salt
**SLICE**
8 Granny smith apples
1 1/2 tbsp lemon juice
4 1/2 tbsp butter
Topping
1 egg yolk
1 tbsp milk
Directions
PREHEAT: Convection Bake to 375 degrees. Bake on middle rack 3, for 55 to60 minutes or until crust is golden brown and apples are tender (test).
1. Mix in small bowl , combine white sugar, brown sugar, flour cinnamon, nutmeg and salt, set aside.
2. With Cuisinart slicing disk set at 4 mm slice apples, place in large bowl, toss apples with lemon juice. Then add sugar mixture toss well to coat.
3. Line my 10 inch pie plate with half the pastry.
4. Place apple filling into crust, dot with butter. Roll out remaining pastry to fit top. For glaze top crust with egg white and sprinkle with sugar before baking .
To Freeze Before baking: Place filling in 10 inch pie tin lined with plastic wrap on bottom so you can lift out when frozen , then tightly wrap frozen pie filling in plastic wrap and seal a meal.
Notes
Used 8 Granny Smith for 10 inch pie
Place a cookie sheet on the lower rack. Place the pie in the center on rack 2 over pan and cook until the crust is golden brown and there is a sign of bubbling juices.
