Mushroom & Walnut Bolognese

200 gm mushrooms quartered
100gm walnuts
1 red onion quartered
1 carrot chopped
2 garlic cloves
1 tsp Italian seasoning
1 tsp dried basil
1 tsp dried oregano
1 can chopped toms
1/4 can water
1 tbsp tamari (or soy sauce)
1 vegetable stock pot
Handful fresh basil (optional)
400 gm spaghetti
Directions
1. Add the mushroom, walnuts, onion, carrot and garlic to a food processor and blend - not too much as you want texture
2. Heat oil in pan and add the blended mixture along with the dried herbs and fry for a few minutes.
3. Add the chopped toms, water, tamari, stock, pinch of salt and pepper and simmer with the lid on for 10 mins
4. Meanwhile boil the spaghetti
5. Stir through fresh basil if using and the pasta & serve
