Enchilada Soup

1 yellow onion, diced
4 store bought red tamales
1 large can medium spiced enchilada sauce (like las palmas)
1 can fire roasted tomatoes
3 cups chicken stock
2 chicken breasts
1 big handful Mexican cheese shredded
Toppings: Tortilla chips, pico de gallo, thin green onions, Mexican cheese
Directions
Sautee onions in olive oil, put in tamales, enchilada sauce, chicken stock. Cook for 15 on medium. Use blender or immersion and blend until smooth. Return to stove, add chicken, simmer 15-20 min. Take out chicken and cube it. Add big handful of Mexican cheese. Top with all toppings.
