Directions
In a bowl, combine 3 cups of all purpose flour, 2 tsp instant yeast, and 1 tsp salt.
Add in 1 1/2 cups of warm water and mix until there’s no dry flour left. You should have a wet sticky dough. Cover and allow to rise 2 hours OR… perform option stretch and folds.
OPTIONAL: if performing stretch and folds, take out your down after rising for 30 minutes. Grab 1 corner of the dough, pull up as far as it will go, then fold it over itself. Turn your bowl 90 degrees and repeat 7 more times. Cover again and repeat the stretch and folds 30 minutes later. After the second set of stretch and folds, cover and allow to rise for another hour.
Once your dough has risen, dump it onto a well floured surface and shape it into a round or oval loaf (use a lot of flour, the dough may be sticky).
Place your loaf on a piece of parchment paper and transfer it to your Dutch oven. Cover with the lid and allow it to rise for another 30 minutes - 1 hour (until doubled in size).
Once done, score a line down the top with a knife or blade. Bake covered in the oven at 450 F for 40 minutes then uncovered at 425F for the last 15 minutes.
Allow your loaf to cool fully, remove and enjoy!!
