**MIX**
1 cup warm water
2 ½ tablespoons active dry yeast or 2 Tbsp plus 1 1/2 tsp
½ teaspoon sugar
**SCALD**
1 cup milk ( 1 min 50 sec check )
**IN BOWL**
6 tablespoons butter
½ cup sugar
½ tablespoons salt
**ADD**
3 eggs beaten
360 grams all purpose flour ( 3 cups )
508 grams bread flour ( 4 cups )
Directions
PREHEAT: Convection Bake 350 degrees. Bake 15 to 20minutes or until brown
Center rack
1. Mix together water, yeast and sugar set aside.
2. Scald milk
3. Place in large bowl butter, sugar, and salt.
4. Add scalded milk and stir until butter is melted and cooled.
5. Add yeast mixture mix.
6. Add eggs and flour mix, then turn out on floured board and knead for 8 minutes.
7. Place in greased dough box and let rise until doubled.About 1 hour
8 Shape into large size balls and place on my medium silver pan, with silat matt, so they are just touching.
Let rise 20-30 minutes then bake.
