Panera Broccoli Cheese Soup

Ingredients

2 tablespoons Melted Butter

1 medium Onion Chopped

1/2 cup Melted Butter

1/2 cup Flour

4 cups Half and Half Cream

4 cups Chicken Stock

1 1/2 Lbs Fresh Broccoli

2 cups Carrots, Julienned (2 Large Carrots)

1/2 teaspoon Nutmeg

16oz Grated Sharp Cheddar Cheese

Salt & pepper to taste

Directions

1. Sauté onions in 2 tablespoons of butter and set aside.

2. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add half & half.

3. Add chicken stock. Simmer for 20 minutes.

4. Add broccoli, carrots, and onions. Cook over low heat 20-25 minutes.

5. Add salt & pepper. Can be pureed in a blender but I don't. Return to heat and add cheese. Stir in nutmeg.

6. Serve with crusty toast and enjoy .
