Zucchini Brownies

Ingredients

1/2 cup Vegetable Oil

1 1/2 cups Sugar

1 tablespoon Pure Vanilla Extract

2 cups All Purpose Flour

1/2 cup Unsweetened Cocoa Powder

1 1/2 teaspoons Baking Soda

1 teaspoon Salt

3 cups Finely Shredded Zucchini .. DO NOT DRAIN

1 1/4 cups Semi-Sweet Chocolate Chunks

Directions

1. Preheat oven to 350 degrees.

2. Prepare a 9x13 pan with butter or cooking spray and line with parchment paper. Allow the parchment to go up the sides for easy removal.

3. In a large bowl combine oil, sugar and vanilla until fully incorporated.

4. Add flour, cocoa, baking soda and salt. Mix until combined. Batter will be very dry.

5. Add zucchini by hand. Let batter rest for 5 minutes.

6. Add chocolate chunks and stir again. Batter should appear more wet. If batter does not appear wet let stand 5 more minutes and stir again.

7. Spread brownie mixture into pan and bake for 25 to 35 minutes. Brownie is done when a toothpick inserted comes out dry.
