Buttermilk Biscuits

◦1040g All purpose flour
◦38g Baking Powder
◦25g Sugar
◦10g Kosher Salt
◦454g Butter
◦354ml buttermilk
◦6g Baking soda
◦garnish with: milk, flakey salt, toasted black peppercorn
Directions
1. grate butter on box grater and freeze
2. mix flour, baking soda, sugar, salt and baking soda
3. mix dry ingredients with frozen butter an break butter into smaller pieces with your hands
4. chill butter in freezer again before adding buttermilk
5. mix butter and dry ingredients with chilled buttermilk and knead slightly until a rough scraggly dough begins to form, take care not to completely incorperate butter into dough.
6. wrap dough tightly in saran wrap and chill for at least 4 hours
7. roll out dough in rectangular shape to 3/4 inch thickness
8. Cut dough into 36 squares and freeze until needed
9 cooking method:
10. brush biscuits with milk and sprinkle with flakey salt and toasted black pepper.
11. line baking tray with parchment and bake at 400 in oven for 20 minutes or until golden brown 3. reheat when firing half chicken
