Butter Chicken Pasta

Chicken Marinade:
500g chicken breast, cubed
½ cup of Ghee
2 tbsp ginger garlic paste
1 cup yogurt of choice
1 tsp garam masala
1 tsp kashmiri chili powder
1 tsp coriander powder
1 tsp turmeric
1 tsp Indian orange food coloring
Salt to taste
Butter Chicken Pasta:
Any pasta of your choosing (here I’m using Casarecce pasta)
Ghee for cooking
1 tsp cardamom
1 tsp cumin seeds
3 red onions, chopped
1 tsp kashmiri chili powder
1 tsp coriander powder
1 tsp garam masala
3 large tomatoes, chopped
½ cup cashews
1-2 packs 250g Nestle All Purpose Cream
salt & pepper to taste
2 tbsp fenugreek leaves/Kasuri Methi
6 knobs butter

Slice your chicken into cubes, and add your ginger garlic paste, yogurt, ghee, salt and spices. Mix and allow it to marinate for around 30 minutes or ideally overnight.
Place your marinated chicken into skewers and place on a hot grill until cooked (or oven if unavailable, at 400F for 45 minutes or until it reaches desired doneness). Set aside for later.
In a pot, add ghee and cook down cumin seeds and cardamom alongside chopped onions. Add turmeric, garam masala, and kashmiri chili powder, and cook down until the onions are soft and slightly browned.
Add sliced tomatoes, and cashews and saute until cooked down before placing it in a blender.
Add the mixture back into a hot pan, and add in your Nestle All Purpose Cream while adding back your cooked chicken along with some butter and fenugreek leaves. Mix until all ingredients are combined.
Add your pasta into the sauce, and toss it until the noodles are well coated. Plate your dish, serve and enjoy.
