French Onion Chicken And Rice

• 1.5 Ibs Boneless Skinless Chicken

Breast, chopped

• I Ib Yellow Onions, sliced

• 3 cups Water

• 1.5 cups White Rice, dry, rinsed

• 4 oz Gouda Cheese, shredded

• 2 Garlic Cloves, chopped

• I packet Lipton Onion Soup Mix

• 2 Tbsp Worcestershire Sauce

• 2 Tbsp Butter

• 1 Tbsp Olive Oil

• 1/2 Tbsp Garlic Powder

• 1/2 Tbsp Paprika

• I tsp Italian Seasoning

• Salt and Pepper to taste

I. In a large mixing bowl add your chopped chicken, 1/2 Tbsp garlic powder, 1/2 Tbsp paprika, I tsp Italian seasoning, and a little salt. Mix well and set aside.

2. Next, heat a large skillet over medium-high heat and add in I Tbsp olive oil. Once your oil is hot, add in your chopped chicken. Cook for 4-5 minutes on each side, or until your chicken is cooked through.

When done, remove from skillet and set aside.

3. Return that same skillet back to the stove over medium-high heat, melt in 2 Tbsp of butter, then add in your sliced onions. Cook for 10 minutes, stirring occasionally.

4. Once your onions are slightly browned, add in 2 Tbsp Worcestershire sauce, your chopped garlic, and cook for 30 seconds.

5. Next, add in 1.5 cups uncooked, rinsed, rice, your packet of onion seasoning, 3 cups of water, and mix together. Let this continue to cook until it starts to boil. Once it starts boiling, reduce the heat to medium-low, cover, and cook for about 15 minutes, stirring halfway through to keep it from sticking.

6. Once your rice is cooked through, stir in your cooked chicken, then top with 4 ounces of shredded gouda cheese, cover, and let it cook for I-2 minutes or until your cheese is melted.

7. When everything is done, give it a taste, and add salt and pepper to preference.

8. Portion out into your meal containers, and enjoy!

• As always, feel free to add in some cooked veggies to increase the fiber and micronutrients in this dish.

• If you cook this in an oven safe skillet, for even more flavor, on step 7 you can melt the cheese in the oven until slightly brown and bubbly.

• For even distribution of meals among meal containers, you can either estimate the portions, or weigh the entire batch, and divide that number by your number of meal containers. This recipe makes six meals, so it would be the total weight, divided by six. That will be your portion size per meal.
