Chicken Katsu Wrap

1 & 1/4 nori sheets
3/4 cup white rice
3 tbsp chopped lettuce
4-6oz raw chicken breast
season with salt & pepper
2 eggs
1/2 cup flour
1 teaspoon salt, pepper, garlic powder
3 tbsp water
1 cup Panko Breadcrumbs
cooking spray oil
Sauce:
1/4 cup ketchup
1 tbsp brown sugar
1/8 cup Worcestershire sauce
2 tbsp oyster sauce
1/2 tbsp garlic powder
How to make it yourself:

Grab your chicken breast and pound and flatten it until half an inch thick
Season the chicken breast with salt and pepper.
In a bowl, mix together your eggs, flour, salt, garlic powder, and black pepper and mix well. Add water until you get a batter-like consistency.
On a plate, pour your Panko breadcrumbs. Grab a piece of chicken, dip it into your batter and let all excess batter drip off, then cover it in the panko breadcrumbs.
Spray your airfrier with spray cooking oil and place your chicken in the airfrier. Coat the chicken with a spray of cooking oil and cook in the airfrier for 360° for 10 min then flip & cook for another 5-10 minutes until the inside is completely cooked & it’s crispy brown. If you use parchment paper like me, cook around 7-10 minutes.
Mix ketchup, brown sugar, worcestershire sauce, garlic, and oyster sauce to make the low calorie katsu sauce.
To assemble the sandwich, place a large square piece of nori on a plate, your cooked white rice, diced lettuce, half of the chicken katsu, a small piece of square nori, and put rice on the corners to glue the sandwich together.
Cut in half and enjoy it with the sauce and enjoy!
I love to make each part of the sandwich separately in batches. That way, I can just assemble the sandwich in less than 5 minutes through the week to enjoy this high protein/low calorie meal!
