Sunday Night Cheesy Mashed Potato Bake

Sometimes Sundays are for roast dinners and sometimes they're for sausages and a great big pile of cheesy leek and cabbage mashed potato...
This is SO comforting. It has all the feels of the cheesy mash my mum used to make, with the added joy of the buttery leeks and cabbage, a few herbs and a dollop of mustard
This was so good with sausages, but I definitely think it would work with roast chicken or my stuffing balls!
I've written up the recipe below - let me know if this one's going on the list! A x
2 leeks finely sliced
6 savoy cabbage leaves (tough middle part removed) finely sliced.
2 x 400g ready made mashed potato
1 tsp dijon mustard
1 tsp dried mixed herbs or Thyme
100g grated cheese (plus extra for topping)
200ml chicken stock
Salt and pepper
Instruktioner
Heat a drizzle of oil in a non-stick pan.
Add the leek and cabbage and sauté on a low heat for 7 minutes until soft.
Heat the oven to 200C fan
Microwave the mash to packet instructions.
Add the mash to a mixing bowl with the leek and cabbage, stock, mustard, dried herbs and 100g grated cheese. Season with salt and pepper and give it a good stir until the ingredients are combined.
Place in an ovenproof dish. Smooth down until level and top with grated cheese.
Bake in the oven for 25 minutes or until the cheesy topping is golden brown.
