Stir-fried Noodles with Crunchy Vegetables

250 g noodles (soba, ramen, or wheat noodles)

1 carrot, julienned

1 zucchini, sliced into half-moons

1 red bell pepper, thinly sliced

2 garlic cloves, minced

1 tbsp fresh ginger, grated

3 tbsp soy sauce

1 tbsp oyster sauce (optional)

1 tsp sesame oil

2 tbsp vegetable oil

1 tsp sesame seeds (black or white)

1 tsp chili flakes (optional)

Fresh cilantro or chopped green onions for garnish

วิธีทำ

Preparing the Noodles

Cook the noodles according to the package instructions.

Drain and rinse under cold water to prevent sticking. Set aside.

Stir-Frying the Vegetables

Heat the vegetable oil in a wok or large pan over medium-high heat.

Add the minced garlic and grated ginger, stir-frying for 1 minute until fragrant.

Add the julienned carrot and sliced bell pepper, cooking for 2 minutes while stirring.

Adding the Zucchini

Stir in the zucchini and cook for another 2 minutes, keeping it slightly crisp.

Mixing with Noodles

Add the cooked noodles to the pan.

Pour in the soy sauce, oyster sauce, and sesame oil. Toss well to evenly coat the noodles.

Finishing Touches & Serving

Sprinkle with sesame seeds and chili flakes if desired.

Stir everything together for another minute, then remove from heat.

Serve hot, garnished with fresh cilantro or green onions.
