Korean Bbq Meatballs

For the meatballs:

1 lb (450 g) ground beef or pork

1/4 cup (25 g) breadcrumbs

2 cloves garlic, minced

1/4 cup (30 g) finely chopped green onions

1 egg

2 tablespoons (30 ml) soy sauce

1 teaspoon sesame oil

1 teaspoon grated ginger

1/2 teaspoon black pepper

For the Korean BBQ glaze:

1/3 cup (80 ml) soy sauce

1/4 cup (60 ml) honey or brown sugar

2 tablespoons (30 ml) rice vinegar

1 teaspoon sesame oil

1 teaspoon chili paste (gochujang or sriracha, optional)

1 teaspoon cornstarch mixed with 1 tablespoon water

For the spicy mayo dip:

1/4 cup (60 ml) mayonnaise

1 tablespoon (15 ml) sriracha

1 teaspoon lime juice

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, combine the ground meat, breadcrumbs, garlic, green onions, egg, soy sauce, sesame oil, ginger, and black pepper. Mix until just combined. Roll into small meatballs, about 1 inch in diameter, and place them on the baking sheet. Bake for 15-18 minutes, or until cooked through.

While the meatballs bake, make the Korean BBQ glaze. In a small saucepan, combine soy sauce, honey, rice vinegar, sesame oil, and chili paste. Bring to a simmer over medium heat. Stir in the cornstarch slurry and cook until the glaze thickens slightly.

To prepare the spicy mayo dip, whisk together mayonnaise, sriracha, and lime juice in a small bowl. Adjust the heat to your preference.

Once the meatballs are done, toss them in the Korean BBQ glaze until fully coated. Serve hot with the spicy mayo dip on the side.
