Ingredients

• 3 small zucchini, chopped

• 2 medium onions, chopped

• 1 medium green pepper, chopped

• 1 medium sweet red pepper, chopped

• 1 jalapeño pepper, seeded and chopped

• 3 Tbsp olive oil

• 4 garlic cloves, minced

• 2 (28-oz each) cans Italian stewed tomatoes

• 1 (15-oz) can tomato sauce

• 1(15-oz) can pinto beans, rinsed and drained

• 1 (15-oz) can black beans, rinsed and drained

• 2 Tbsp chili powder

• 1 Tbsp smoked paprika (optional)

• 1 tsp salt

• 1 tsp ground cumin

Optional for serving

• ¼ cup chopped fresh cilantro

• ¼ cup chopped fresh parsley

• Cheese

步驟

  1. In a large skillet, saute zucchini, onions and peppers in oil until tender.

  2. Add garlic, cook 1 minute.

  3. Stir in remaining ingredients. Bring to a boil over medium heat. Reduce heat, cover and simmer 30 minutes or until heated through, stirring occasionally. ALTERNATIVELY, transfer material from step 2 into an oversized crockpot, stir in remaining ingredients, and cook on medium or high (depending on your time availability) until heated through.

  4. Optional: garnish with fresh cilantro, parsley, and/or cheese.
