Pepperoni Hot Honey Pizza

Dough
500g Bread Flour
1 tbsp Kosher Salt
4g Yeast
1 tbsp Olive Oil
1.5 cups Water
Sauce
12 oz Can of Tomatoes
0.25 tbsp sugar
0.5 tsp Salt
0.5 tsp Italian Seasoning
0.25 tsp Crushed Red Pepper
Toppings
1 stick Pepperoni
1 ball Fresh Mozzarella - thinly sliced
Hot Honey to taste
Fresh Basil to taste
Parmesan Cheese to taste

Add all dough ingredients to a food processor and blend until combined
Press dough into a 9" x 13" pan greased with olive oil. Flip the dough so there's a layer of olive oil on top too
Allow to proof for 1-2 hours (approximately doubled in size)
Add all sauce ingredients to a sauce pan and blend smooth with immersion blender. Simmer until somewhat reduced
Once dough has risen, preheat oven to 450 degrees and gently press the dough into the edges of the pan to make a small lip
Add cheese first - this helps shield the dough from the moisture of the sauce
Add sauce - slightly more than you'd think because it evaporates in the oven
Cover in pepperoni, drizzle with hot honey, and grate parmesan on top
Bake for about 20 minutes or until the pepperoni is very crispy
Chop up some fresh basil and sprinkle over the pizza along with some additional parmesan

Cutting the pepperoni thick helps it to curl into little cups in the oven. Feel free to use pre-sliced pepperoni or any other toppings you'd like.
Basil tip: Stack the leaves flat then roll them up all together, and cut small slices from the end of the roll. This will give you thin strips.
