English muffin, split and toasted

2 slices Canadian bacon, fried or poached

2 poached eggs

Hollandaise Sauce:

1 egg

1 tsp Dijon mustard

1 tbsp lemon juice

1 cup melted butter

Layer in order above, sprinkle with paprika, and top with a slice of black olive and a sprig of parsley.

Hollandaise Sauce:

In blender, put egg, mustard, and lemon juice. With blender running, add butter in a slow, steady stream.

Option to add a slice of tomato under the egg.
