    1 c sliced carrots

    2/3 c chopped celery

    1/3 c chopped onion

    2 c water

    1/2 tsp salt

    1/4 tsp pepper

    2 tbsp butter

    2 tbsp flour

    2 c milk

    1 c shredded cheddar cheese

    1 c shredded American cheese

    1 c cubed ham

    In a large saucepan combine potatoes, carrots, celery, onion, water, salt, pepper.

    Cook over medium heat stirring occasionally until it comes to a boil. Cover and reduce heat and continue cooking until vegetables are crisp-tender.

    Meanwhile, in a saucepan melt butter. Stir in flour. Cook stirring continuously over low heat until smooth and bubbly. Stir in milk. Continue cooking stirring occasionally until mixture thickens and boils for 1 minute.

    Remove from heat. Stir in cheeses and ham until cheese melts. Add to undrained, cooked vegetables. Cook over medium heat, stirring occasionally until heated through.
