Spicy Thai Peanut Sauce

1/3 cup creamy peanut butter
3 Tbsp fresh lime juice
2 Tbsp low-sodium soy sauce
4 tsp brown sugar
4 tsp sambal oelek (optional)
4 Tbsp water, depending

Whisk all ingredients together, adding water in Tbsp increments until desired consistency. Thick has more flavor and is great for a spring roll dipping sauce but doesn’t pour and coat as well. Thinner is better for a buddha bowl. f you're sensitive to spice, omit the sambal oelek.

From Rachel: When making this with the Thai Buddha bowl, I double or triple the recipe, yielding 1 1/3–2 cups sauce.
