Creamy Tomato Pasta

600g chicken
280g pasta (any type you like)
2 onions
4 garlic cloves
1 packet of diced tomatoes
A handful of fresh basil
20ml olive oil
1 tbsp Italian herb seasoning
1 tin of plum tomatoes
15g sugar
75ml double cream
40g Parmesan
2 tsp salt

Preheat your oven to 180°C. Throw the onions, garlic, basil, diced tomatoes, Italian herb seasoning, and olive oil into your mum’s biggest pot. Roast it for 45 minutes to an hour until everything looks well roasted.
Take the pot out of the oven, shove it on the stove, and add the plum tomatoes along with the sugar. Blitz the whole thing up until it looks like actual sauce. Then, stir in the double cream, Parmesan, and salt.
Meanwhile, cook your pasta until it’s about 75% done. Don’t overdo it—this isn’t a crime scene. Drain it and toss it straight into the sauce to finish cooking and soak up all that flavour.
For the chicken, I cooked mine yesterday because, honestly, who has time? Just cook up a big batch of chicken whenever you can and throw it into everything you make (except your Cheerios). Add your pre-cooked chicken to the pasta and mix it all up.
Serve it up in a bowl, sprinkle with more Parmesan, and, if you’re feeling artsy, chuck on a basil leaf. If you’re really going for it, whip up some garlic bread—it only took me 30 seconds.
