Texas Pulled Pork

• 1 tsp vegetable oil

• 4lb PORK SHOULDER roast

• 1 cup bbq sauce (tangy or spicy)

• ½ cup apple cider vinegar

• ½ cup chicken broth

• ¼ cup brown sugar

• 1 Tbsp prepared yellow mustard

• 1 Tbsp Worcestershire sauce

• 1 Tbsp chili powder

• 1 onion, chopped

• 2 cloves garlic, minced

• 1½ tsp dried thyme

• Up to 12 hamburger buns

Optional for serving

• Cole slaw

• Additional bbq sauce

  1. Pour vegetable oil into the bottom of a crockpot then add pork roast.

  2. Mix remaining ingredients in a bowl, and pour over the roast.

  3. Cover and cook on low (8 hours for 2 lbs and 10 hours for 4 Ibs). When done, the pork should shred easily with a fork.

  4. Remove pork from the crockpot and place on baking sheet, then shred meat using two forks.

  5. Return shredded pork to the crockpot and stir to combine with juices. Alternatively, instead of returning back to the juices, leave on the baking sheet and add more bbq sauce until you get the consistency/taste you like.

My family members don't love onions so l do less than a whole onion, and it still tastes great.

We like the pulled pork on buns with coleslaw. I get a bag of coleslaw from the grocery store and make according to the package directions (about 15 minutes) and put in the fridge for 20 minutes before serving.

If 4 lbs of meat is too much for your needs, 2 Ibs works great too. That requires only 8 hours of cooking on low heat and will make 5-6 sandwiches.
