Creamy Mushroom & Asparagus Chicken Penne

2 chicken breasts, sliced

2 tbsp olive oil

1/2 lb asparagus, trimmed and cut into pieces

8 oz penne pasta

2 cups cremini mushrooms, sliced

1/2 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped

Salt and pepper to taste

Cook the penne pasta according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned and fully cooked, about 6-7 minutes.

Remove the chicken and set aside. In the same skillet, add asparagus and mushrooms. Cook until tender, about 5 minutes.

Stir in heavy cream and chicken broth, bringing the mixture to a simmer. Cook for 3-4 minutes until the sauce thickens.

Add the cooked penne and chicken back to the skillet. Toss to combine and coat with sauce.

Stir in Parmesan cheese and season with salt, pepper, and fresh parsley. Serve hot.
