Refried Bean and Cheese Tostadas

Four 6-inch corn tortillas
3 tablespoons grapeseed or other neutral oil, divided
1 small yellow OR red onion, chopped
Kosher salt and ground black pepper
1 tablespoon chopped pickled jalapeños, plus more to serve
1 teaspoon chili powder
15½-ounce can black beans OR pinto beans, rinsed and drained
2 ounces Monterey jack OR cheddar cheese, shredded (1 cup)
Shredded iceberg lettuce OR shredded green cabbage, to serve
Sour cream, to serve
Optional garnish: Lime wedges OR chopped fresh cilantro OR chopped tomato OR sliced or diced avocado OR salsa OR hot sauce OR a combination

Heat the oven to 400°F with a rack in the upper-middle position. Brush the tortillas on both sides with 1 tablespoon of the oil, then place them in a single layer on a rimmed baking sheet. Bake until golden brown and crisp, 8 to 10 minutes, flipping them once about halfway through. Let the tostadas cool on the baking sheet; leave the oven on.
In a 12-inch nonstick skillet over medium, heat the remaining 2 tablespoons oil until shimmering. Add half of the onion and ½ teaspoon salt; cook, stirring occasionally, until beginning to brown, 3 to 4 minutes. Stir in the pickled jalapeños and chili powder, then add the beans and ⅓ cup water. Bring to a simmer and simmer, uncovered and stirring occasionally, until the liquid is reduced by about half, 3 to 4 minutes. Remove the pan from the heat and mash the mixture to a thick, coarse puree. Taste and season with salt and pepper.
Divide the bean mixture evenly among the tostadas, spreading it to cover. Top each with cheese, dividing it evenly, and bake until the cheese melts, 1 to 2 minutes.
Place the tostadas on individual plates. Sprinkle with the remaining chopped onion, additional pickled jalapeños and lettuce, then spoon on sour cream.
